Notes:

• Fresh and raw garlic, over time, changes through a process called the Maillard reaction, using low heat and about 70% humidity. During this process, black spots become distinguishable, and the texture and taste of garlic also change.
• Black garlic has fewer active compounds of allicin compared to its fresh and raw counterpart, but it contains higher concentrations of many nutrients and other beneficial compounds. (The pungent smell of raw garlic is due to allicin.)
